Even though the torential rain and howling winds outside tell me summer is definitely over, I'm still a salad-for-lunch-at-work kind of girl, not least because the office is always a little too warm, and since this salad from Kalyn's Kitchen would help to make a dent in my rather out of control basil plant, it won the contest for this week!
And here's what I made:
Roasted veggies are always yummy with olives, and roasting the chickpeas was a great idea to blend the flavours more. The basil and feta rounds it off nicely with a Mediterranean feel.
I threw in some asparagus as well, as I happened to have it lying around. I also didn't bother slicing my kalamata olives. They still tasted the same ;o)
Ease Of Preparation:
A nice, easy make, and while the roasting is happening, you can make something else!
Enough for 5 good lunches
Definitely one to revisit, and a nice quick make for weekday lunches
