Rocket Salad With Feta & Fresh Tomato-Balsamic Vinaigrette - Lunch Review

I have to admit that I decided to make this just because the dressing sounded interesting!  I’d like to know where Kalyn gets her rocket from though, the leaves are massive!

The Verdict:

Taste/Texture:

I’ve always thought tomatoes and balsamic vinegar went well together, and this dressing proved what a happy marriage they have, especially when mixed with peppery rocket and cool feta.  I threw in a few kalamata olives too for good measure, just because I could really…

Substitutions:

I added 5 kalamata olives and used 1/5 of a block of feta, crumbled and ½ bag wild rocket per serving.

Ease Of Preparation:

Very easy, and the dressing is super quick with an immersion blender.

Amount Made:

The only bulk amount of anything you make for this is the dressing, and I reckon it’s at least 2 weeks’ worth of salads that the amount made could dress.

Final Verdict:

I’ll definitely make this again, keeping in the olives, and perhaps trying some capers and/or sundried tomatoes to bulk it up a little.
