Broccoli Parmesan Fritters - Dinner Review

I do love a good fritter on occasions (although not the potato ones from the local chippy!) and having enjoyed the courgette fritters previously from Smitten Kitchen, I thought I would give the broccoli ones a go this time:


And here's what I made:


The Verdict:

Taste/Texture:

I'm totally with Deb on the fact that you can't get better than a vegetable fritter - these were fabulous!  My only textural challenge was that when it came to mash up the broccoli, I remembered that I don't actually have a potato masher.  Well, I don't eat mashed potatoes (or potatoes at all really) so it hadn't occurred to me to keep hold of one to mash broccoli ;o)  Still, I think I managed okay with a fork, and my hands.

Substitutions:

I decided to pop a poached egg on top of mine, as well as some pancetta to make it into a dinner, and I used wholemeal flour.  Possibly because I used wholemeal flour, I ended up needing to use another egg in the batter, but it all came together well after that.

Ease Of Preparation:

Quick and easy, especially if you have a potato masher...

Amount Made:

I went for 4 super sized friters, 2 of which, along with the pancetta and poached eggs made up the perfect dinner.

Final Verdict:

I will definitely be giving these another go, and now I think about it, those courgette ones must be due for another airing too...

Not sure if I like fritters or not since I've never been able to make myself try them but I do like broccoli so I'll give them a try.
