Lemony Chickpea Stir-Fry - Dinner Review

In the ongoing Phase 1 month, it seemed time for another stir fry, and this one from 101 Cookbooks looked like a nice, easy mid-week meal.  It's not a traditional Chinese-style stir fry, but that made it more intriguing!


And here's what I made:


The Verdict:

Taste/Texture:

Oh my, can I just tell you how much my brain could not comprehend this was a stir fry because there was no soya sauce and the like in it?!  But now it's utterly convinced that lemon juice works perfectly :oD

Substitutions:

I had to use one big green courgette rather than 2 green and yellow ones as pictured in the original, and having tasted for seasoning at the end, I also added in some more lemon juice to get a good burst of the flavour, but that was it!

Ease Of Preparation:

Super easy, and as for all stir fries, do all your prep first!

Amount Made:

The recipe says it serves 2-4, but I would say this is definitely down at the 2 end of that scale if you're not serving it with anything else (and you don't need anything else)

Final Verdict:

This was yummy!  The combination of the lemon and slightly crunchy chickpeas was fab, it's definitely a keeper.

Must admit, I'm with you on the not quite getting my head round it only being lemon juice! But I do love my chickpeas and lemon.
