Black Eyed Pea Stew - Dinner Review

We don't have new year associations with black eyed peas like they have in the US, but hey, a good stew is a good stew right?  So when I saw this on Eat, Live, Run, I had to give it a go.

And here's what I made:

The Verdict:

Taste/Texture:

This was the perfect winter warmer in the arctic temperatures and wind we're getting right now!  Plus a great way to round out a particularly long and arduous day helping someone move house.  With the stock in it, it's almost more soup like that stew like, but yummy all the same!

Substitutions:

We don't get andouille sausage, chicken or otherwise, so I used some of the Romany sausages from my mum's butcher.  He makes the most fabulous selection of flavoured sausages, which change all the time, and they are the most enormous things you have ever seen!  We also don't get collard greens, so I used kale, which apparently is collard greens' brother or something like that.  I grilled my sausages first to get as much fat out as I could before adding them to the pan.

Ease Of Preparation:

Nice and simple, especially if you use tinned beans, and your greens come pre chopped (I can't actually get kale otherwise)

Amount Made:

I got 6 good dinner portions out of this, 4 of which are now tucked into the freezer.

Final Verdict:

Another addition to the freezer stock rota I think, definitely to be repeated.
